1- First peel and cut your onion in half and then mix it with the garlic.
2- Arm yourself with a good sharp knife to cut your pumpkin into pieces of about 3 cm. Add them to the blender along with the onion and garlic and blend again.
3- Put the chopped butter in a hot pan and add the pumpkin, onion and garlic mixture. Sear for 5 minutes, stirring occasionally, then add the brown sugar, salt, pepper, cinnamon and nutmeg. Add the infused water to the vegetable stock and cook for about 20 minutes. Add the fresh cream and mix everything together.
4- Serve warm in soup plates and sprinkle with herbs of your choice. Treat yourself !
